The recipe is based on a classic recipe from Eating Bird Food, but we have added our own twist to make them extra delicious. And the best part is, you can vary the fillings and shape of your crackers, so you never get tired of them!

• 120 g flour (1 cup) • 1/2 tsp fine sea salt • 40 g olive oil (6 tbsp) • 1 tbsp ground flaxseed + 6 tbsp water • 1 tbsp flaky salt (optional) • 2 tbsp seed mixture (optional)
• Rolling pin • Pizza cutter • Oven
1. Preheat the oven to 175 °C (conventional oven).
2. In a medium-sized bowl, combine flour, water, oil, ground flaxseed, and sea salt, and mix until the mixture forms a dough.
3. Place the dough on a piece of parchment paper and cover it with another piece of parchment paper.
4. Flatten the dough with your hands and then use a rolling pin to roll out the dough. You want the dough to be as thin as possible, about a few millimeters. Roll the dough into a rectangular shape as best as possible.
5. Once the dough is rolled out, remove the top piece of parchment paper and sprinkle a little flaky salt and seed mixture over the dough. Use your hands to press it into the dough, so it sticks. This step is optional, but the flaky salt and seed mixture make your crackers look beautiful and give them extra flavour.
6. With the top piece of parchment paper removed, use a pizza cutter or a knife to cut the dough into small squares.
7. Carefully transfer your crackers (still on the parchment paper) to a baking sheet and bake for 20-25 min or until golden brown and crispy. The pieces on the outer edges will brown faster than the center ones. You can move the golden ones onto a wire rack and put the pan back in the oven to bake the remaining crackers.
8. Allow your crackers to cool completely, either on the baking sheet or on a wire rack. Enjoy immediately after cooling.
9. Place any remaining crackers in an airtight container or bag. Your crackers can be stored on the kitchen counter or in the pantry for about 4-5 days.
