Here is the easiest and most adjustable recipe for our plant-based brunch idea – vegetable rolls inspired by Micadeli. You can use any vegetable you have in your fridge. Trust us, you can’t go wrong with veggies.
Our savory hummus varieties will always make sure the result will impress even the most demanding picky eaters! Did someone say, kids?
• 2 tbsp. Sweet Potato Hummus (60 g)
• 2 tbsp. Red Pepper Hummus (60 g)
• 2 tbsp. Cheesy Hummus (60 g)
• 1 ripe avocado
• Juice from 1/2 lemon
• Salt and pepper
• 3 big tortillas
• 1/2 cucumber, sliced
• 2 tomatoes, sliced
• Handful of spinach
• 1 bunch fresh dill (or any other herb)
1. In a bowl, mash the avocado together with the lemon juice, salt and pepper, and (optionally) some oil.
2. Spread our hummus on 3 tortillas, followed by avocado mash, a layer of spinach, thinly sliced cucumber and tomatoes.
3. Roll the tortillas firmly like a roulade and cut into slices 2-3 cm thick.
