There’s no brunch without a great pastry, can we agree on that? Especially when we are talking about a plantbased one!
This slightly sweet braided bread inspired by Aline Made fits great to our nut butters and will work just perfectly not only for brunch, but for breakfast or snack times as well!
• 500g all-purpose flour • 2 tsp active dry yeast (or 20g fresh yeast) • 300ml lukewarm soy/oat milk • 30g sugar of choice • 2 tsp salt • 60g plant-based margarine/butter
• 2 tbsp unsweetened soy/oat milk • 2 tbsp agave/maple syrup
• Food processor (optional)
1. Melt the butter on low heat.
2. In a bowl, combine the yeast with the lukewarm soy milk and sugar. Let sit for 5 minutes until foaming. Knead it with the flour and salt by hand or with your food processor at low speed for 5 minutes.
3. Add the melted butter and knead the dough for another 5-10 minutes until you have a smooth unsticky dough. Cover the bowl with a tea towel and let it rise for 1.5 hours at a warm place (or overnight in the fridge).
4. Split the dough into 3 equal pieces and roll them out into stripes. Press the top edges of the stripes together and start braiding a regular braid. Once you reach the bottom of the stripes, press them together again to make sure they won’t fall apart while baking.
5. Transfer the braided bread on a baking tray lined with parchment paper. Brush it with your bread wash, and let it rise for another 30 minutes at room temperature.
6. Preheat your oven to 200°C (or 180°C with fan).
7. Brush the bread again with the bread wash and bake it for 25 minutes until golden brown.
8. Enjoy it with our nut butters.
